Coconut rice, pineapple lime rice , soy ginger rice, lemon dill rice, Mexican rice, spicy green rice, chicken rice, Indian spice rice

Coconut rice

Coconut rice

2 cups rice, 1 can unsweetened coconut milk, 2 cups water, 1.5 tsp salt, splash white vinegar, 3 tsp white sugar
 
 
Mexican rice

Mexican rice

1 cup rice, 1 8oz can tomato sauce, 1 cup vegetable broth or water, 1/2 tsp chili powder, 1 tsp cumin, salt and pepper to taste
 
 
Indian spice rice

Indian spice rice

2 cups rice, 1/2 tbs cumin seeds sauteed in olive oil, 1 tbs curry powder, 1 tsp ground cumin, 1/2 tbs salt, 1/4 tsp cayenne, 4 cups water
 
Chicken rice

Chicken rice

2 cups rice, 4 cups water, chicken bouillon (optional: 1.5-2x amount needed for 4 cups water for stronger flavor)
 
Pineapple lime rice

Pineapple lime rice

1.5 cups rice, 20oz can crushed pineapple, 2.5 cups water, 1 tbs butter, zest from 1 lime, 1.5 tsp salt, after cooked mix in juice from 1 lime
 
Soy ginger rice

Soy ginger rice

1 cup rice, 1/2 cup soy sauce, 1.5 cups water, 2 tbs sherry, 2 tbs brown sugar, 2 tbs Sriracha, 1 tbs minced fresh ginger
 
 
Spicy green rice

Spicy green rice

14oz vegetable broth, 2 poblano peppers, 3 serrano peppers, 2 small zucchini - simmered together 15 min. Blend with 1/2 cup cilantro, 4 garlic cloves, and 1.5 tsp salt. Cook 1 chopped onion in olive oil, add rice and pepper mixture
 
Lemon dill rice

Lemon dill rice

1 cup rice, 1 tsp lemon zest, 1/4 tsp turmeric powder, 2 cups vegetable stock, juice of 1 lemon (~3tbs). Mix in fresh dill after cooked
